Rob bought me this watch for my birthday and emailed me a picture of it, and hoped it would make it by my birthday. Well it came today and I love it! Thank you Robbie! The other pictures are of my Porter! He's getting so big and he really isn't a baby anymore, and he reminds me of that everytime I call him one. We go to a playgroup on Thursdays, and their are so many babies, and it made me realize how quickly my kiddos have grown! In the meantime for those who are counting down with me ...5 more Sundays people!! 5 more!!

If you've seen a picture of me recently, it probably includes bags under my eyes. Apart from missing Rob, and having to fulfill both parenting roles, the hardest is trying to sleep without Rob. I find myself trying everything possible to make myself as tired as possible, but sure enough I lie here unable to sleep. It funny how much we take for granted when it comes to our loved ones, namely our spouses. Today I couldn't open the dang salsa jar...I'm a strong woman...and I couldn't open it, so I put it back on the shelf. When it comes to bedtime I always curl my arms in and lay on my side and wedge myself right underneath Rob's back, and it makes me feel so secure and peaceful, and I can almost guarantee that I will be fast asleep before long. So sleeping next to my Rob will be something I never take for granted again. I can't wait to feel whole again. I am forever grateful he is the man he is...and that he loves me.

Favorite Dinner
So Rob was aking me what my favorite dinner was, and for the life of me I couldn't tell him something that topped my chart! Then last night, I REMEMBERED!!! I love to stick chicken breasts in the crockpot with green salsa, and let it cook then serve it in tacos, burritos, tacos salads...you name it. Well everytime we go to a mexican restaurant I get chile rellenos...its heaven...covered in sauce! Everyone has there own version, but I've found and awesoem recipe! This is my favorite meal...as far as being in the mood for mexican, and whenever I plan on working out hardcore the next day. It's definitly not my healthiest dish, but most mexican isn't. So you can stuff these with whatever tickles your fancy, but I like white cheese and the green chicken shredded and prepared as explained above. Now what you top these with is up to you as well, I love topping mine with green or red chile sauce, lettice, and onions. I know some people use a variety of different peppers, but I love poblanos!!
Chile Rellenos
1. Roast the peppers (poblanos)
I stick mine in the broiler until its nice and blistered on the outside...let it cool then peel off the skin.
2.Take out the seeds
Make a tiny slit in the pepper, and remove the seeds. I do this over the sink with the water running.
3.Stuff the pepper
Insert your chicken, and cheese, or whatever you chose to place inside
4.Roll in flour
5. Roll in batter
6. Place in frying pan, when one side is lightly brown, gently flip it over
7. Top and Enjoy
8. Workout the next day, so I'm not responsible for your heart trouble!
Batter recipe:
4 eggs separated (egg yokes in one bowl, egg whites in the other)
dash of salt (in with egg yokes)
1 tablespoon flour (in with egg yokes)
Whip egg whites until small peaks..then mix flour egg yokes, and salt together into a light paste and slowly mix in with egg white mixture.

My Birthday
Today is my birthday. It was pretty great. I really missed that husband of mine, but we can't have it all. I got a sitter tonight and me and my friend Brittany (shown here) got pedicures, grabbed dinner, and did some shopping! It was so much fun, and I feel blessed to have a good friend like her here. My sweet husband sent flowers and bought me a beautiful watch. I am so blessed to have such a great family and awesome friends to make my birthday special!! Thanks guys!

Easter in the 80's
The kiddos and I were in the car driving home from the store today, and I couldn't help turning up the radio and singing along to a fun 80's song.....or two. Then this next conversation started:Savannah: What is this song?
Me: It 's a fun song from the 1980's, from when I was a kid
Savannah: 1980's....that was a loooong time ago
Me: yep
Savannah: you were a kid in the 80's?
Me: yeah baby
Savannah: Did they have Easter back then? I don't think the Easter bunny is that old!

Big Boy Bed
So we took the side off of Porter's crib to see how he would do in a regular bed, which I will be ordering this weekend. He did so well, he was so excited to be in a "big boy" bed. He slept ALL night!!! This was exactly what he (and mommy) needed! I'm so proud of him, and excited that both kiddos will be in a regular twin bed soon.

Countdown
I've been trying really hard not to countdown the days or even weeks, but I found myself doing that very thing today. We officially have about 7 more Sundays, after today that is! I can't say that this time has been the easiest....its actually been one of the hardest, but I love that fact that I am with my kiddos. I feel for Rob, atleast when I miss him I have two little ones that make me smile. I am so grateful for them, the way they smell, the way they laugh, the new things they are learning...it makes me smile! However in my quest to unwind from my sometimes hectic days I have discovered two items that have helped. The first is an anti-stress aromatherapy lotion from Bath and Body works, and the second is Dr. Teals epsom bath salts. A lot of the time if your having trouble with stress or anxiety your body will crave b vitamins and magnesium. There's lots of magnesium uin these bath salts...and as you soak it should absorb and the salts are filled with oils to make your skin super soft. I've tried it the past two nights, and its soooooo relaxing! Anyway I know many of my friend are or will be in the single momma boat with me soon, so I thought I'd share what I've found to help.

Home Sweet Home
Oh blog...How I've neglected you! Well we are back home. I love my family so much, but we were homesick, and daddysick so we drove back, and I enrolled Savannah back into her old class. We are all content. Before we left for Missouri our ward was dissolved and combined with another one. There are lots of new young couples, and lots of wives in the same boat as me. Its a nice feeling to live in a community that knows exactly what your going through. I went to a new (new to me) playroup today, and had so much fun chatting with some neat girls, and watching the kiddos play. I might add it has been in the upper 50's this week! I'm breaking out the sandals! I got a sitter for tonight and I'm going to go get new hairdo...not sure what yet, but just a little change. I'll post pictures later(with my new camera, which I LOVE).
