A Slice of Humble Pie

Tonight(ok, well I guess its technically Sunday, by I'm talking about last night) me and my awesome husband and our friends, Ili and Brittany went to Humble Pie up in Edmond. It was so good. Its an authentic Chicago-style pizzeria. The owner just opened it a couple months ago and its been doing really well, and I heard them talking about it on the radio, so Brittany suggested we give it a try. The owner recommended two pizzas that weren't on the menu, one was a greek goddess pizza and the other was a chipotle chicken pizza...and they were YUMMY. It is definitely my new favorite pizza joint. After our fun dinner we came back here and watched "Bedtime Stories" which I really liked! All in all this has been a great weekend.

I took Savannah out on a girls night last night. We went to the movies and saw the Hannah Montana movie, and surprisingly enough, I really liked it and Savannah loved it! She was dancing in the isle, it was so cute. After the movie we went to Pink Swirl, it a frozen yogurt shop near by, and it serves the BEST frozen yogurt ever! So all in all I had an amazing time with my little girl...Thanks Savanni for being my swwet baby and the coolest little girl ever!

One more month until my trip to Utah to see my most awesomest, coolest( yes i know i'm using improper english) best friend Jamie!!!! Many adventures await!!!!

this past week

I've discovered i have the brain of an elephant...aren't they supposed to have horrible memories? I've realized that if I don't write down my memories or events, I have a hard time remembering the details. That being said, hopefully this blog can serve that purpose. This past week Rob was off from work so we decided to go spend the week with my parents in Branson. They just bought a new home there and we were excited to check it out. I love the neighborhood they moved into. The neighbors across the street have 5 kids and the neighbors behind my parents have a couple kids too. The street they live on is secluded from the rest of the neighborhoods, so Savannah made friends and they could go outside and play in the yards. y parents had a huge fenced in backyard that Porter could play in, while we watched from the deck. The kids shared a room, and we were nervous about that, but it was great. Savannah actually insisted that her brother be with her. So they shared a room, and slept great...the first night was an adjustment, but after that they loved it. The first day we were there we went down the the zoo in Springfield, which i didn't even know was there. Its a pretty nice zoo, about as big as the Oklahoma City Zoo. That night Rob was excited to go play church ball with Merrill, and Adam (our friend from St. Louis who now lives in Branson with his cool wife-Gloria and their little boy). Then the next day we went out and got the kids a slip and slide, which was so much fun...the water was so cold but it was fun. Then that night Savannah went to a show with my mom and we al hung out with Adam and Gloria. Then on Saturday my dad rented this huge pontoon boat and we all (me, Rob, the kids, my parents, Merrill, Briahna, Adam, and Gloria) were so excited it was such a nice boat, and my dad got a tube to pull in the back. When the boat first took off the kids had a death grip on mommy and Savannah didn't really enjoy the boat but Porter seemed to love it! Merrill and Adam were the first ones to jump in the water and go tubing, it looked so funny, I'll have to get the pictures from my mom. we got out and about an hour and a half into our trip it started thundering pretty badly so we thought we should start the trip back to the marina. Well as we started back, about 2 minutes later it began to rain...then began to pour. It wasn't just a tiny sprinkle, it was HUGE drops and my dad was driving the boat pretty fast trying to get us back, so they were smacking us in the face and it was COLD. I had Porter under the canopy, which didn't provide much shelter since it seemed to be raining sideways. i had him on my lap covered with a beach towel. Savannah was in between Briahna and Merrill in towels. Well we finally made it back to the Marina and the rain lightened up. That night me and Rob went out to dinner with Merrill and Briahna, then Rob and my Dad went to go see Wolverine. I did some awesome outlet shopping, and all in all it was such a fun trip! Savannah cried so hard when it was time to go , she really loves it there, as we all do! Thanks Mom and Dad for being so much fun!

Chile Rellenos Casserole= Yum Yum

I had a couple requests for this recipe...so here goes:
Chile Rellenos Casserole

serves 6
Ingredients:
  • 4 tablespoons all-purpose flour
  • 1 cup evaporated milk
  • 1 cup sour cream
  • 3 eggs
  • 2 cups salsa
  • 8 fresh poblano chile peppers
  • 2 cups Monterey Jack cheese, shredded
  • 2 cups mild Cheddar cheese, shredded
  • 1 1/2 cups diced cooked chicken

DIRECTIONS

  1. Preheat oven on broiler setting. Roast chiles under broiler until skin is brown and charred on all sides. Cool until you are able to touch peppers, then peel off skin. Make a slit down one side of the pepper, and remove stem and seeds. Dice up the chiles and place on bottom of 9x13 inch dish. Reduce oven temperature to 350 degrees F (175 degrees C).
  2. Line the bottom of the baking dish with chiles. Layer Monterey Jack cheese and Cheddar cheese evenly over chilies. Spread cooked chicken over cheese. In a medium bowl, using a wire whisk, mix flour with a small amount of evaporated milk until it forms a smooth paste, then whisk in remaining milk and sour cream. Beat in eggs, one at a time. Pour evenly over chicken.
  3. Bake in preheated oven for 40-50 minutes, or until center of pie becomes firm. Spread salsa over top, and bake for 10-20 minutes. Allow to cool 5 minutes before serving.

me and my baby

Today was such a beautiful day, I think what made it even more beautiful was that it wasn't supposed to be so sunny today. The forecast was nothing but rain and clouds for today but we woke up to sunshine, and it only became prettier throughout the day. Savannah had a Primary activity at the church today and she ade the cutest collage of her family and favorite things. Then Brittany took us out and took some pictures of me and Rob. We haven't had pictures of just the two of us since we were engaged, so we figured we would get some taken. She did an amazing job I think. After our photos we met some friends for lunch. Once we were home we played outside with the kiddos, which is always fun! Today was a fabulous day!

We miss the daddy-o

So Rob was out of town for work this past week, and its never our favorite time but i always try to plan a couple special things when he's gone to try to distract the kiddos. Some of our plans were already made fro us this weekend because Savannah had her school carnival on Friday night, which was so much fun for her. She saw all f her little friends, and we played games and they had some of those inflatable jumping things, train rides, and lots of junk to eat. We did have a pretty low key Saturday, the weather was so rainy and cloudy that we spent most of the day inside cleaning, playing and relaxing. Sundays are always interesting . If you have or have had an almost 2 year old you know that making it through sacrament meeting is quite an ordeal. Well I always get a little MORE anxious when I have to do it alone. But Porter did better than I imagined. Then yesterday my Robbie came home!! I wasn't expecting his plane to land until after 5 but he sometimes tells me that so he can suprise me with arriving earlier. Since Porter has been waking up so early (he always wakes up super super early when Rob is gone) he didn't get a great nap, so he fell asleep on my lap when we were watching a movie, and i heard the doorbell ring and we got up to get it and it was DADDY holding 2 bouquets of flowers (one for me and one for Savy) and a little toy car for Porter. We love the Daddy!

My brothers birthday

My brother's birthday was at the end of April and he and my parents came down to celebrate. Merrill's awesome wife was out of town for work and we didn't want him to be alone on his birthday, so we invited all of them down here. It was so much fun, as it always is when my family gets together. On Friday night I whipped up some BBQ and we through a pirate party for Merrill. His wife arranged a treasure hunt and it was Merrill's golden birthday, so it fit. The kids had so much fun doing the treasure hunt and dressing up . On Saturday we went down to Bricktown Art Festival. The kids went to the kids section and created some mosaics, puppets and spirit sticks. It was such a great weekend.
